gf/ vegan salted caramel & apple oatmeal cookies


We go apple picking in the mountains every fall.  About three years ago, I was trying to come up with some recipes to get rid of all the apples!  Somehow we came up with oatmeal apple cookies!  So it's been a tradition to make these cookies, however, they needed somethin' {ahem} sweet.  I would use whatever candies I've had on hand, butterscotch chips, Heath toffee chips... but this year, we stumbled on to salted caramels!  Whoa.

gf apple cinnamon granola bars


Ok.  Had to share my latest fall granola bar.  Apple Cinnamon Nut.  They are amazing!  It's a adaptation of this recipe.

grain-free pumpkin cheesecake


You had me at "pumpkin."  That's all you have to say.  I love pumpkin.  I love cheesecake.  So, I made a pumpkin cheesecake using my grain-free pie crust.

gf/ vegan apple cinnamon bread


Fall is in the air!  Those crisp fresh breezes, a slight tinge of yellowing in the leaves... pumpkin and apple flavors showing up in grocery stores, coffee shops, and candle stores.  I love it!  It's my most favorite of seasons, being that I am a Florida resident runaway. :)  The only seasons we had were, hot, hot, hotter, and ridiculously hot!  I am so thankful that we moved further up "north" to North Carolina, where the seasons are so pleasant!  Apple bread always gets me in the fall mood.  This time, I tweaked the recipe to be a tad bit healthier than last season...

grain-free granola


I eat granola every. single. day.  I have a routine that involves incorporating berries, kefir or greek yogurt (for probiotics) and nuts and seeds every morning or at least once during the day.  I have shamelessly spent the money on gluten-free granola many times, while not really enjoying it either.  I don't like a lot of fillers like oats and sugar.  So one day, I decided it was time to make my own granola recipe.  After playing with it a few times, I think I finally nailed it.  I can't believe how simple it was!  I have finally met the perfect bowl of granola!
